Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper or chilli flakes (optional, for a bit of a kick)
  • 1/2 teaspoon mustard powder (optional, enhances the cheese flavour)
  • 1 cup (100g) grated cheddar cheese + a little extra for the top
  • 3/4 cup (180ml) milk

Instructions

  1. Preheat Your Oven: Preheat your oven to 180°C and line a baking sheet with baking paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, cayenne pepper, and mustard powder.
  3. Add the Cheese: Stir in the grated cheese, making sure it’s evenly distributed throughout the flour mixture.
  4. Add the Milk: Pour in the milk and gently stir with a fork until the dough just comes together. Be careful not to over-mix, as this can make the scones tough.
  5. Shape the Dough: Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle or rectangle about 2 cm thick.
  6. Cut the Scones: Use a floured round cutter or a knife to cut out your scones. Place them onto the prepared baking sheet.
  7. Sprinkle Cheese on Top: Sprinkle the leftover cheese on top of each cut scone.
  8. Bake: Bake for about 10-15mins until cheese is melted and just golden.
